How To: Caramelizing Onions

Here is another post that is simple and easy!

I have here a straight forward “how to” on making caramelized onions! If you haven’t tried caramelized onions yet, well now is the time you should! They are great on top of pretty much anything grilled… hot dogs, burgers or steaks and inside soups, dips and sauces… the list goes on!  The only thing you need {besides an onion} is time! If you are making caramelized onions for a dinner party or a large group.. count on 1 large onion for every two people, because they will reduce and shrink down considerably!

Melt 2 tablespoons of butter with 1 table spoon olive oil, or in my case 3 tablespoons of bacon fat in a large pan over medium-low to medium heat.
While the pan is heating, cut the top and the bottom off of your onion.
Slice thin.
Keeping the onions uniformed in thickness for an even cook time.
Add the onions to the preheated butter/olive oil or bacon fat and toss. It should start to sizzle.
Toss the onions in the fat in the pan.
Cook Slowly. This is after 5 minutes, they start to soften… the key to caramelizing is to turn the onions often enough that they don’t burn, but not overly much that they wont get brown. Is this not totally confusing?
Then after a total of 10 minutes… you will see they start to turn a golden color.
After 15 minutes the onions are a deeper golden.
At 20-25 minutes total cook time… they are a pretty deep amber color and it smells insanely good!!
