Honey Glazed Salmon with Mango Salsa

There’s something about salmon with a fruit salsa over top that I just love.

Rich buttery salmon plus a fresh burst of fruit- gah! It’s summer so fresh produce is at it’s best and my body literally craves light and healthy meals just like this. Last year, me and my daughters were obsessed over the baja citrus salmon with strawberry mango salsa. This year, while Pat was away with friends on a golf trip, I made this honey glazed version.

It takes only minutes to prep and cook and is basically a guilt free meal. A summer go-to recipe for sure.

To Make This Honey Glazed Salmon with Mango Salsa You Will Need:

for the mango salsa:

  • mango
  • red onion
  • cilantro
  • jalapeño
  • salt
  • lime juice

for the salmon:

  • honey
  • coconut aminos
  • avocado oil
  • sriracha
  • salmon filets
  • garlic powder
  • onion powder
  • white pepper

Make The Mango Salsa:

In a medium bowl, add 2 diced ripe mangos, 1/2 a medium red onion, 1/3 cup finely chopped cilantro, 1 medium jalapeño (remove seeds and ribs for less heat), a pinch of kosher salt and the juice of 1/2 a lime.

Stir to combine and set off to the side.

Make The Glaze:

In a bowl, measure and add 2 tablespoons honey, 1 tablespoon low-sodium tamari, 2 teaspoons avocado oil and 1 teaspoon sriracha.

Whisk until combined and set off to the side.

Move oven rack to the highest position and preheat your broiler on high. Then place a piece of foil onto a large, rimmed baking sheet and spray with a nonstick spray. Place the 4 salmon filets, skin-side facing down on to the prepared pan. Sprinkle with onion powder, garlic powder and white pepper and then lightly spray with nonstick spray.

Broil the salmon for 5 to 6 minutes.

Remove the salmon and brush with 1/2 of the glaze. Return the salmon back under the broiler for another 2 to 3 minutes.

Remove and brush with the remaining glaze. The salmon should be opaque and flake easily.

Top the honey glazed salmon with generous amounts of the mango salsa and serve.

Honey Glazed Salmon with Fresh Mango Salsa

Ingredients

FOR THE MANGO SALSA:

  • 2 ripe mangos, diced
  • 1/2 medium red onion, finely diced
  • 1/3 cup finely chopped cilantro
  • 1 medium jalapeño, finely diced, seeds and ribs removed for less heat
  • 1 pinch kosher salt
  • 1/2 lime, juiced

FOR THE SALMON:

  • 2 tablespoons honey
  • 1 tablespoon low-sodium tamari, or low-sodium soy sauce
  • 1 teaspoon avocado oil, or extra light olive oil
  • 1 teaspoon sriracha, more or less to personal taste
  • nonstick spray
  • 1 pound salmon fillets
  • garlic powder
  • onion powder
  • white pepper

Instructions 

MAKE THE MANGO SALSA:

  • In a bowl add the diced mango, onion, cilantro, jalapeño, salt and lime juice. Toss well to combine and set off to the side.

MAKE THE SALMON:

  • Position the oven rack in the highest position and preheat your ovens broiler to high. Line a rimmed baking sheet with foil and spray with nonstick spray.
  • In a bowl, measure and add the honey, tamari, avocado oil and sriracha. Whisk well to combine.
  • Place the salmon skin-side down onto the prepared pan. Sprinkle with onion powder, garlic powder and white pepper and then lightly spray with nonstick spray. Once broiler is preheated, broil for 5 minutes.
  • Remove the salmon and brush with 1/2 of the glaze. Return the salmon back under the broiler for another 2 to 3 minutes. (Watch closely to avoid burning)
  • Remove and brush with the remaining glaze. The salmon should be opaque and flake easily.
  • Serve with fresh mango salsa over top. See blog post for serving suggestions.
