Meet my latest (and possibly most favorite) overnight oats recipe!

If you know me, you know I love anything lemon. From lemon desserts and sweet treats to lemon pasta and everything in between (don’t even get me started on lemon pancakes!). So why not make a little lemon oatmeal?

These overnight oats are filled with bright sunshiny lemon and warm vanilla cheesecake-y goodness – it’s so good it could possibly pass for dessert. This recipe is the 5th overnight oats recipe on SS and it’s right up there with the banana macadamia nut, strawberries and cream, banana bread and vanilla peach versions I’ve created over the years.

Ingredients for Lemon Cheesecake Overnight Oats

To Make Lemon Cheesecake Overnight Oats You Will Need:

  • old fashioned rolled oatsThese work best for overnight oats.
  • vanilla protein powderThis can be optional but is great to keep you feeling full and satisfied for longer.
  • chia seedsAnd excellent source of fiber. It also helps thicken the oatmeal.
  • vanilla yogurtI like to use a high-protein greek yogurt (Oikos pro).
  • whipped cream cheeseLends that cheesecake-like flavor.
  • maple syrupAdds sweetness and flavor.
  • lemon zestGives you that fresh citrus flavor.
  • lemon extractLends additional lemon flavor. I like either Simple Truth or Simply Organic. (not sponsored)
  • milkI use unsweetened vanilla oat milk. If using plain milk, add a small splash of vanilla extract.

optional toppings:

  • vanilla yogurt
  • maple syrup
  • lemon zest
  • white chocolate chips

In a jar or container with a tight fitting lid, measure and add 1/2 cup old fashioned rolled oats, 2 tablespoons vanilla protein powder and 1 tablespoon chia seeds.

To that, add 2 tablespoons vanilla yogurt, 1 tablespoon whipped cream cheese, 1/2 teaspoon lemon zest and 1/4 teaspoon lemon extract.

Lastly, pour in 3/4 cup unsweetened vanilla oat milk.

Cover and refrigerate overnight

ready to eat the next day

The next morning, uncover and either enjoy it cold or warm it in the microwave.

I like to top mine with a dollop of vanilla yogurt, a drizzle of maple syrup, extra lemon zest and a few white chocolate chips.

Lemon Cheesecake Overnight Oats

Ingredients

  • 1/2 cup old fashioned oats
  • 2 tablespoons protein powder
  • 1 tablespoon chia seeds
  • 2 tablespoons vanilla yogurt, I use a high protein yogurt
  • 1 tablespoon whipped cream cheese
  • 1 teaspoon pure maple syrup, or more to taste
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon lemon extract
  • 3/4 cup unsweetened vanilla oat milk, or use regular milk with a splash of vanilla extract

FOR SERVING (OPTIONAL):

  • 1 dollop vanilla yogurt
  • 1 drizzle pure maple syrup
  • 1 tablespoon white chocolate chips
  • lemon zest

Instructions 

  • In a jar or container with a tight fitting lid, measure and add oats, vanilla protein powder and chia seeds. To that, add yogurt, whipped cream cheese, emon zest and lemon extract. Lastly, pour in the vanilla oat milk.
  • Stir well to combine and cover and refrigerate overnight.
  • Then next morning, uncover and either enjoy it cold or warm it in the microwave. I like to top mine with a dollop of vanilla yogurt, a drizzle of maple syrup, extra lemon zest and a few white chocolate chips.
