Honey Fig Jam Cottage Cheese Toast

I love a good midday toast snack.

A classic peanut butter with either honey or raspberry jam, hummus toast, avocado toast, whipped feta topped with marinated tomatoes – the list goes on. However, this cottage cheese toast situation is my latest obsession. It starts with toasted quality sourdough bread that is then topped wit cottage cheese, sweet fig jam and hot honey. To.Die.For.

Honey Fig Jam Cottage Cheese Toast

There’s a couple ways I make this. Toasting the sourdough and topping with cottage cheese remains the same BUT, I either use Jenkins Jellies Fiery Fig Jam -aka the most delicious spicy fig jam there ever was (not sponsored) and top with regular honey or (if I’m out of that) I use regular fig jam and top with hot honey. Either way the spicy sweet combo is incredible with the creamy cottage cheese and the crunchy texture of the crusty bread.

To Make Honey Fig Jam & Cottage Cheese Toast You Will Need:

  • sourdough breadOr use a sturdy bread of your choice.
  • cottage cheeseI use Good Culture low-fat 2% (not sponsored).
  • fig jamAdds a touch of sweetness and delicious flavor.
  • honeyUse hot honey or regular.
  • walnutsToast whole in a dry skillet until fragrant, then roughly chop!

Why do you need a step-by-step post of this? I don’t know. But start by toasting whole walnuts in a dry skillet until fragrant, then roughly chop and set off to the side. Next toast your sourdough. One piece of toast is enough for me but I was also making one for Mal as well.

Once toasted (although it doesn’t look toasted) top with a few spoonfuls of cottage cheese and spread evenly.

Do the same with a few spoonfuls of fig jam.

Lastly, drizzle with honey and top with chopped toasted walnuts.

Ingredients

  • 1 to 2 tablespoon walnuts, toasted and chopped
  • 1 slice sourdough, or sturdy bread of choice
  • 1/4 cup cottage cheese, I like Good Culture 2%
  • 1 to 2 tablespoons fig jam
  • 1 drizzle honey, or hot honey

Instructions 

  • Add 1 to 2 tablespoons walnuts to a dry skillet. Heat over medium to medium-low, tossing occasionally until fragrant. Transfer to cutting board and roughly chop.
  • Toast your sourdough bread and spread with cottage cheese. Top and slightly swirl with fig jam, drizzle with honey and top with the toasted chopped walnuts
