Grilled Double-Decker Pizza Sandwich

I perfectly aware that this recipe is really not that scratchy, but it’s Friday and who cares? This sammy was inspired from when I would tag along as a child to grocery shop with my Mom. Grocery shopping with her always took FORRRRREVVVVVERRRR. And by the time we reached the produce section, I’m pretty sure three hours had lapsed and we’d be famished. Luckily right there was this a little cafe, where you could get, well food I suppose… I’m not sure exactly what else they had, because my sister and I always, always, ALWAYS got the double-decker grilled cheese!

Since I had some leftover Texas toast from this recipe, I immediately thought about those dang double-deckers. I opened up my fridge… yanked out some marinara and pepperonis…  in 10 easy minutes. This pizza sandwich was born.

Three pieces of Texas toast, cheese… griddled. SO GOOOOOD yet so bad! You may want to go dust off the treadmill… there’s a whole lotta carbs going on here. All things in moderation right?


Left over Texas toast, your favorite marinara {homemade or jarred, nobody judges}, pepperoni and cheese. I thought I bought mozzarella… but after I emptied out everything in my fridge and onto my counter tops, I realized I must not have. I must have dreamt it… but I swear I did! You’ll need some butter too.


Slice your roni’s in half. Nobody likes to bite into a hot sandwich or slice of pizza for that matter and get slapped in the chin with a blazing hot cheesy pepperoni… it hurts. A lot.


Butter four slices of bread.


Lay two pieces of buttered bread, butter side down and top with some cheese.


Then roni’s.


A few tablespoons of the marinara sauce.


Add another slice of {un-buttered} bread, more pepperoni, sauce and cheese… or cheese then sauce. Doesn’t matter. Never mind. Top with the last piece of buttered bread {yes butter-side up}, flip and griddle some more until a dark golden crust appears and the cheese is melted.


Can it be? A quadruple double-decker?

Grilled Double-Decker Pizza Sandwich

Yield: two

Ingredients:

6 slices Texas Toast

4 slices Mozzarella or Colby Jack

16-20 small Pepperonis

1/2 cup Marinara, more or less to taste

4 tablespoons Butter

Directions:

Heat a griddle to 350-375 degrees. Or a pan over medium heat.

Slice pepperonis in half. Butter four slices of bread and place two slices {butter-side down} on preheated griddle. Layer cheese, a few pepperonis and a couple tablespoons of marinara. Top with a slice of {un-buttered} Texas toast, cheese, pepperonis and sauce. Top that with the last piece of buttered bread {butter-side up} and flip once the bottom is golden. Griddle until a golden crust appears and the cheese is melted. Cut and serve!

    Good one! I had to laugh at your shopping story. My kids hated to go with me to the store. They're adults now and still won't go with me because they say I take too long. I think three hours is a reasonable time to buy groceries!
