I’m so “that girl” who makes the grocery list, by ingredients, then reorganizes the list by layout of the grocery store, but forgets the parmesan cheese for the chicken parmesan!!

How does it happen? I’ll never know. But this recipe happened by accident {some of the best ones do!} especially when you aren’t so freaked out by following the directions, you can relax and make something really tasty! One huge thing I have learned over the years is PREP! PREP! PREP!! Get everything ready, chopped and measured out before you start, so when it comes to the actual cooking part… it will be easy {or at least easier}! I can’t tell you how many “well-done” onions it took to make me realize to peel and mince the garlic before I sauté the onions!!

This is one of those easy and versatile recipes you can plat with, adding onions and bacon and cheddar, spinach and prosciutto and mozzarella, you can get really creative! Today I was making these for my girls, so getting my youngest to eat the green peppers was a creative battle enough. It did cost me a dollar, but she loved them and so did I. I had two and then promptly took a nap.

No precise measurements are really required, so have a blast and start burrito-ing!

To Make These Easy Breakfast Burritos You Will Need:

  • 4 large eggs
  • kosher salt and freshly ground black pepper, to taste
  • red pepper flakes, to taste (optional)
  • 1 tablespoon whole milk
  • 1/3 cup diced green pepper
  • 1/3 cup diced roma tomato
  • 1/2 to 3/4 cup diced cooked sausage – turkey sausage links work great!
  • 1/2 cup freshly grated cheddar jack or colby jack cheese
  • 1 tablespoon butter
  • 2 flour tortillas

Get your ingredients ready because these move fast.

Crack 4 large eggs and sprinkle with kosher salt and black pepper. Hello pretty eggs!

Then sprinkle with as much or as little red pepper flakes as you like. I was making these for my kids so I added a little.

Add 1 tablespoon of milk and give those eggs a good whisking.

Then set aside right next to the skillet on the stove.

Melt 1 tablespoon of butter in a medium skillet over medium heat until bubbly.

Throw in 1/3 cup diced green peppers. Of course, you could skip these if you’re not a green pepper fan, maybe add dice onion?

Sauté them for a minute until they lighten a little in color and soften up a little. Next throw in the 1/3  cup seeded and diced tomatoes.

Wait about a minute before you add 1/2 to 3/4 cup diced cooked breakfast sausage. And since they are already cooked I just wanted to heat them through. Simple right!?

Give it a toss.

Then pour in your eggs, reduce the heat to medium-low. You don’t want over cooked eggs. When it comes to scrambled eggs remember low and slow!

Push the eggs around with a rubber spatula, til they are cooked but not dry.

While those are cooking, grab your tortillas, I like to lay a damp paper towel over them to keep them from drying out and place them in the microwave for about 45 seconds. YOU WANT THESE BABIES HOT! Or else they will be hard to wrap and believe me they will break!

Toss on the freshly grated cheese, kill the heat and toss gently…. wait for it…

Just until the cheese begins to melt, remove it from the heat.

Now comes the fun part.

Lay out a hot tortilla…

Place the desired amount of the filling into the center of your HOT tortilla. Start by folding the bottom up, and then wrap the sides around the filling.

These were so fantastic I wanted to cry. Okay so I didn’t actually cry, but it totally squashed that McDonald’s craving I had! These were great! I can’t wait to try some other combinations.

Breakfast Burritos

Always have a few leftover sausage links or patties? Make burritos!

Ingredients

  • 4 large leggs
  • 1/3 cup diced green pepper
  • 1/3 cup diced roma tomato
  • 1/2 to 3/4 cup diced cooked breakfast sausage links
  • 1/2 cup freshly grated cheddar jack, or colby jack cheese
  • 1 tablespoon butter
  • 1 tablespoon whole milk
  • kosher salt, to taste
  • freshly ground black pepper
  • red pepper flakes, to taste (optional)
  • 2 flour tortillas

Instructions 

  • Whisk together the four eggs, salt, pepper, red pepper flakes and milk and set aside.
  • Heat the butter in a medium sized pan over medium heat. Add green pepper and cook until slightly soft, toss in the tomato and cook for a minute.
  • Next add the sausage and cook until heated through.
  • Pour in the eggs and reduce heat to medium low.
  • Push the eggs around the pan until they are light and fluffy and cooked through.
  • Mean while heat the tortillas in the microwave until hot.
  • When the eggs are cooked turn off the heat and add the cheese, toss until the cheese begins to melt.
  • Place desired amount onto a hot tortilla, fold and repeat. Eat three then take a nap.
