My second favorite breakfast item on the McDonald’s menu (the first being a sausage biscuit with egg and cheese) is definitely their breakfast burritos. The cheese collects in the bottom for the last bite to be all cheesy-egg goodness!! Since I’ve given up fast food I’ve been figuring out how to recreate copycat recipes in my kitchen. And wouldn’t you know it, as luck would have it I had all these ingredients on hand already to make these burritos! That never happens!

I’m so “that girl” who makes the grocery list, by ingredients, then reorganizes the list by layout of the grocery store, but forgets the parmesan cheese for the chicken parmesan!! How does it happen? I’ll never know. But this recipe happened by accident {some of the best ones do!} especially when you aren’t so freaked out by following the directions, you can relax and make something really tasty! One huge thing I have learned over the years is PREP! PREP! PREP!! Get everything ready, chopped and measured out before you start, so when it comes to the actual cooking part… it will be easy {or at least easier}! I can’t tell you how many “well-done” onions it took to make me realize to peel and mince the garlic before I sauté the onions!!

This is one of those easy and versatile recipes you can plat with, adding onions and bacon and cheddar, spinach and prosciutto and mozzarella, you can get really creative! Today I was making these for my girls, so getting my youngest to eat the green peppers was a creative battle enough. It did cost me a dollar, but she loved them and so did I.  I had two and then promptly took a nap.

No precise measurements are really required, so have a blast and start burrito-ing!

Get your ingredients ready because these move fast. You will need sausage links, I used the left over ones from yesterdays breakfast, but you can cook up your own if you want, then just chop them up up into bite size pieces. Shred some fresh Colby Jack cheese, Please Please grate your own cheese. The bag kind just doesn’t melt the same, trust me! Finely dice up 1 “cheek” or side of a green bell pepper and half of a Roma tomato (removing the gooey seeds). You will need 4 eggs, a tablespoon or splash of whole milk, a tablespoon of butter, salt, pepper and pepper flakes.

Crack the eggs and sprinkle with kosher salt and black pepper. Hello pretty eggs!

Then sprinkle with as much or as little red pepper flakes as you like. I was making these for my kids so I added a little.

Add your splash of milk and give those eggs a good whisking…

Then set aside right next to the skillet on the stove…

Heat the butter in a medium skillet over medium heat until bubbly.

Throw in the diced green peppers… you could skip these if you’re not a green pepper fan, and add dice onion or neither… but I LOVE LOVE LOVE green pepper!

Sauté them for a minute until they lighten a little in color and soften up a little. Next throw in the to-mat-oes! Here is a little pet peeve of mine about all tomatoes…

The gooey seeds…

I always toss those out… scoop and toss! Then your eggs wont be runny and slimy… eeeew grody!

Wait about a minute before you add the sausage. And since they are already cooked I just wanted to heat them through. Simple right!?

Give it a toss.

Then pour in your eggs, reduce the heat to medium low… or low even. You don’t want over cooked eggs. When it comes to scrambled eggs remember low and slow!

Push the eggs around with a rubber spatula, til they are cooked but not dry.

While those are cooking, grab your tortillas, I like to lay a damp paper towel over them to keep them from drying out and place them in the microwave for about 45 seconds. YOU WANT THESE BABIES HOT! Or else they will be hard to wrap and believe me they will break!

Look!! Big-soft-fluffy yummy scrambled egg pieces… did I mention yummmmmmmmmmmmy!

Toss on the freshly grated cheese, kill the heat and toss gently…. wait for it…

WAIT FOR IT…

*sigh*

Just until the cheese begins to melt, remove it from the heat.

Now comes the fun part. Lay out a hot tortilla…

Place the desired amount of the filling into the center of your HOT tortilla. Start by folding the bottom up, and then wrap the sides around the filling.

These were so fantastic I wanted to cry. Okay so I didn’t actually cry, but it totally squashed that McDonald’s craving I had! These were great! I can’t wait to try some other combinations.

Oh and if you didn’t want to use the flour tortillas, try the egg filling in romaine lettuce leaves!

Enjoy! And if you give these Breakfast Burritos a try, let me know! Snap a photo and tag me on twitter or instagram!
