Whole Wheat Banana Oatmeal Pancakes with Peanut Butter Maple Syrup

Breakfast. Not my strong suit… at least not during the school week that is. Give me a sunny Sunday morning and I’ll whip ya’s up something fierce. But during the week our breakfast menu usually rotates between oatmeal, toasty pb English muffins or whatever I can think of and/or have time for at 7:30 in the morning.

But every now and then I make a large batch of good-for-you-pancakes and freeze them for a quick future breakfasts. Because let’s face it… when you have to make breakfast AND lunch for two kids before 8am, one of the meals should at least be easy.


These pancakes are bursting at the seams with flavor. I like to leave the banana a little chunky so you get bites through out… and the banana with the pb maple syrup… incredible! Oh yeah… and these are pretty darn healthy too. Score! You could easily swap out the all-purpose flour for an all-whole-wheat approach on these pancakes. And if you don’t have coconut oil, try it with {unsweetened} applesauce.


Start by adding a cup of oats to a mini food processor.


Blitz it until it resembles coarse flour.


Add in the whole wheat flour.


The AP flour, salt, baking soda & powder,


Add the dark brown sugar.


Whisk to combine and set off to the side for a momento.


Into a measuring cup, crank an egg and add in 3/4 teaspoon of real vanilla extract.


Add in the coconut oil.

Mash up one banana with a fork or your fist… which ev.


Add it in to the pancake batter and heat up a griddle.


I lightly oiled my griddle with a little coconut oil and heated it up to 350-375 degrees. I like to use a quarter cup measure to dole out the batter. Flip when the bubbles pop and don’t fill back in then repeat with the rest of the batter.


Question.. have you ever thought to mix peanut butter with real maple syrup? no? Well DO IT! It’s crazy good! Remember when I made peanut butter? Remember when I said I was making two little lovely ladies pancakes? Well my friends, here’s the perfect way to put peanut butter to good use… not that there is a bad way to use it… it is peanut butter after all, duh.


Measure out a quarter cup of pb, homemade or your favorite store bought.


Throw it in a small saucepan with the maple syrup, stir and heat over low to keep warm. Stir before dumping all of it pouring a little over the pancakes. No really… you don’t need a ton of the liquid gold, it’s pretty darn rich.


What’s that? You like to eat peanut butter covered bananas too?

Whole Wheat Banana Oatmeal Pancakes with Peanut Butter Maple Syrup

Yield: serves 8, makes 16 pancakes

Ingredients:

1 cup uncooked Rolled Oats

1 cup Whole Wheat Flour

3/4 cup All Purpose Flour

2 tablespoons Dark Brown Sugar

2 teaspoons Baking Powder

1/2 teaspoons Baking Soda

1/2 teaspoon Kosher Salt

1 whole Egg

2 cups Whole Milk

2 tablespoons Coconut Oil, plus more for griddle

3/4 teaspoon Real Vanilla Extract

1 Banana, coarsely mashed

FOR THE SYRUP:

1/2 cup Real Maple Syrup

1/4 cup Smooth Peanut Butter

Directions:

Place the rolled oats into a mini food processor or blender. Blend until the texture of coarse flour. In a large mixing bowl combine the ground oats, flours, brown sugar, salt, baking soda and powder. Set a side.

In a large liquid measuring cup or bowl; whisk together the egg, vanilla, coconut oil. Mash the banana and add that in as well. Combine the we ingredients into the dry and stir to combine. Let the batter sit for a few minutes while the griddle heats up.

Spread a little coconut oil over a hot griddle. Use a quarter cup to measure out pancake batter onto the preheated griddle. Flip once the bubble pop and no longer fill back in with batter. Keep warm and repeat with the rest of the batter.

Over low heat; combine the peanut butter with the maple syrup. Stir and keep warm until ready to use.

    Another peanut butter combo I discovered lately is mixing it with honey and chocolate syrup – they taste awesome as a dip for apples and I'm sure they'd taste just as good with these pancakes!

    I just made these and WOW, best pancakes ever. I’d never tried ground up oats in pancakes before and loved the addition! I used coconut milk instead of whole milk, and increased to two bananas (which makes the pancakes a more gooey consistency inside, a matter of preference). The syrup was out of this world! It’s my new favorite topping hands down. Thanks for this recipe!
