I think this apple galette is my favorite dessert pie because there’s no pinching, no double pie crust rolling. Just pile in the fillings, fold and bake.
And of course, galettes are known for their no fuss reputation.
So this pie errr galette, is as simple as they come. I didn’t even have to run out to the store for ANY of it. I, surprisingly, had it all on hand… the apples I bought thinking my girls would pack them in their lunches. They did not… SO in celebration of some really good news…

Next weigh out 2 L-B’s of granny smith apples.
Then peel, core, quarter and slice.
Next, throw the apple slices into a big bowl.
Then squeeze in two tablespoons of fresh lemon juice, watch for those sneaky seeds.
Next add in two tablespoons of sugar, two tablespoons of flour and a couple pinches of kosher salt.
Then toss them all around.
Next after the 30 minutes of the cheddar pie dough being in the fridge, pull it out and roll it out to a circle.
As you can see, I’m not very good at it but who cares? It’s supposed to look rustic. Right?
Next, fold up the sides, brush with butter and bake in a 425° oven for 15-20 minutes. Reduce the heat to 350° and continue to bake for 15-20 minutes more or until the apples are tender. I don’t like super mushy apples. I like them soft but with still a little texture.
Ta-DA!!!! See how incredibly easy! But you know me and my love for brown butter.

I fell in love with this apple galette first with its looks and then with the taste. I’ll take that side with the extra thick crust. Yes.

I love this apple galette because it isn’t rich and overly sweet. It’s not loaded with spices. It’s just a simple apple recipe with a flaky cheddar pie crust.
Simplicity at it’s best.

Simple Apple Galette with a Cheddar Pie Crust + Sweet Brown Butter Drizzle
Ingredients
- 1 recipe cheddar pie crust
FOR THE APPLES:
- 2 pounds granny smith apples, peeled, quartered and cored, sliced about a 1/4-inch thick.
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons unbleached all-purpose flour
- 2 tablespoons granulated sugar
- 1-2 pinches kosher salt
- 3 tablespoons butter, divided
FOR THE BROWN BUTTER DRIZZLE:
- 4 tablespoons unsalted butter
- 1 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 1-2 tablespoons whole milk
Instructions
Make the Apple Filling:
- Add the peeled, sliced apples into a large bowl. Squeeze in 2 tablespoons {I eye ball it} of fresh lemon juice, watch for seeds! Add in the 2 tablespoons of flour and sugar and a couple pinches of kosher salt. Toss to combine until the apples are coated.
Make the Galette:
- On a lightly floured surface, roll the dough out to an eighth of an inch thick. Pile the apple filling in the center and fold up the edges and dot with one tablespoon of butter.
- Melt the remaining two tablespoons and brush the edges of the pie crust. Pour any remaining butter over the top of the apples.
- Bake in a preheated 425° oven for 15-20 minutes. Reduce the temperature to 350 and continue to bake the galette for an additional 15-20 minutes, or until the apples are tender.
- Remove and let cool.
Make the Brown Butter Drizzle:
- In a small skillet melt the half stick up butter over medium heat. Continue to let the butter brown until it reaches a deep golden brown. {for a "how to" tutorial see the link in the post above}
- Remove the pan off of the heat and whisk in the powdered sugar, vanilla and whole milk.
- Use the whisk or a fork to drizzle the brown butter glaze over the top of the galette.
- Cool slightly before cutting and serving.

After seeing the pics I was almost hooked, but when you said you were “noivous” about putting cheddar in the pie crust you had me (why do I like strange misspelled words in a blog so much?).
