These garlic lime shrimp skewers are so easy. Shrimp in a quick marinade of garlic and lime and then grilled is just the thing for any day of the week.
It feels kind of strange typing up this spring-summery-grilling post as I snuggle under a blanket with the fire going in the fireplace.
It is May… but the temperatures are low, I was cold and suggested we have a fire. Not for one second did I think I’d get one… but here I am; snug as a bug in a rug. Yeah, I said it.
Shrimp on the grill is easy. These grilled garlic lime shrimp skewers consist of a 10 minute marinade of garlic, lime, cilantro (that’s it!) and then grilled is delicious perfection and just the thing for any day of the week. Give me a couple of these shrimp skewers, a beer with a lime in it and I’m in heaven.
To start, peel and devein the shrimp or buy the ones that are already prepped for you.
In a shallow dish; add the lime zest, kosher salt, black pepper, garlic and chopped cilantro.
Squeeze in two to three tablespoons of fresh lime juice…
Three tablespoons of olive oil. I’m using STAR garlic infused grilling oil, it’s perfectly garlicky and my shrimp won’t stick to the grill… bonus.
Give it a whisk…
Toss the shrimp and toss them in the garlic lime goodness and let them marinate for no longer than ten minutes or else the acid in the lime juice will actually start to “cook” the shrimp {ceviche}.
Slip four shrimp onto one skewer. If using wooden skewers, it’s a good idea to soak them in water for thirty minutes to an hour.
Place the skewers on a preheated grill and cook for 4 minutes.
Flip and continue to cook for 4 more minutes or until the shrimp are cooked through.
Serve these garlic lime shrimp skewers atop jasmine rice with more cilantro and a squeeze or three of fresh lime and a little sriracha if you’re in the mood for spice.

Grilled Garlic and Lime Shrimp Skewers
Ingredients
- 1 lime, zested
- 3 tablespoon olive oil
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoons fresh cilantro, minced
- 1 clove garlic, minced
- ¾ tsp kosher salt
- ¼ tsp freshly ground black pepper
- 32 shrimp, which have been shelled and deveined
- wooden skewers, soaked in water for at least 30 to 60 minutes
Instructions
- Soak 8 skewers in water for no less than 30 minutes. This will keep the skewers from catching fire once on the grill.
- In a shallow dish combine the zest of one lime with olive oil {STAR Grilling (Garlic) Cuisine Cooking Oil}, lime juice, minced cilantro and garlic, salt and black pepper.
- Toss the cleaned shrimp into the garlic lime marinade and let sit for no longer than 10 minutes, or else the citrus juice will start "cooking" the shrimp.
- Preheat the grill to medium-high. Meanwhile thread 4 shrimp on to each wooden skewer and brush more of the marinade over top.
- Once the grill is pre-heated place the garlic-lime shrimp skewers on to the grill grate. Cook for about 3-4 minutes per side or until fully cooked.
- Serve over rice.

I like grilling Shrimp. They are easy to get on the skewers. They cook quick and they turn such a lovely rosy pink. Many people don’t like fish, but they seem to like shrimp. So that is good too. So many food related issues when cooking for several people. The lime adds a nice ‘I am on vacation’ taste to the shrimp.
