Love cilantro lime rice? Imagine a coconut version!

I’m a cilantro lime rice girly, however, I also love coconut rice. So why not combine the two?! Jasmine rice cooks with coconut milk until tender and fluffy, then tossed it with a little coconut oil, some fresh, finely chopped cilantro, lime zest and lime juice. Did I mention it’s made in a rice cooker? It is! If I’m making rice, 9 times out of 10 it’s in a rice cooker. Truthfully, it’s one of my favorite appliances. There’s only a handful of rice recipe I make in a saucepan; rice pilaf, turmeric rice and saffron rice – because the rice cooker is so much easier.

Ingredients for Cilantro Lime Coconut Rice

To Make Cilantro Lime Coconut Rice You Will Need:

  • white riceI like to use jasmine rice.
  • kosher saltEnhances the flavors in this dish.
  • coconut milkLends flavor and creates a fluffier, more moist rice.
  • waterI use coconut water, but tap water is fine too.
  • cilantroLends a pop of brightened distinct herbaceous freshness.
  • limeAdds bright citrusy flavor. You’ll need both the zest and juice.
  • coconut oilAdds subtle coconut flavor while helping keep the rice from becoming sticky.

Most rice cookers come with their own specific measuring cup. With that said, using the measuring cup that comes with your rice cooker, measure and add 2 “cups” rice to a mesh strainer. Rinse with cool water, shaking and stirring the rice a little, until the water runs clear.

Transfer the rice to your rice cooker and add 1 teaspoon kosher salt.

Pour in 1 (14 ounce) can of full-fat coconut milk.

Next, pour in 3/4 cup water. If you have coconut water, use that.

Stir these ingredients together before closing the lid and

Then, like your slow cooker, set it and forget it. Well, for at least 40 minutes or so.

Once cooked, the rice should be fluffy and smell incredible.

Transfer the cooked coconut rice to large mixing bowl and add in 1/2 a bunch (if it’s a large bunch) cilantro that is finely chopped (remove and discard the thick stems), the zest of 1 lime, juice of 1/2 the lime and 2 teaspoons coconut oil.

Cilantro Lime Coconut Rice

Ingredients

  • 2 cups jasmine rice, or white rice
  • 1 teaspoon kosher salt
  • 13.5 ounces full fat coconut milk
  • 3/4 cup water, I use coconut water
  • 1/2 bunch cilantro, thick stems discard, finely chopped
  • 1 lime, zested
  • 1/2 lime, juiced
  • 2 teaspoons coconut oil, melted

Instructions 

  • Most rice cookers come with their own specific measuring cup. With that said, using the measuring cup that comes with your rice cooker, measure and add the rice to a mesh strainer. Rinse with cool water, shaking and stirring the rice a little, until the water runs clear.
  • Transfer the rice to your rice cooker and add the kosher salt, full-fat coconut milk, and water. Stir well to combine. Close the lid to your rice cooker, press the "white rice" button and allow the rice cooker to do the work.
  • Transfer the cooked coconut rice to large mixing bowl and add in finely chopped cilantro, lime zest, lime juice and thecoconut oil.
  • Toss well to combine. Serve immediately.
