To Make these Beef Blue Cheese Crostini Bites You Will Need:
- French baguette
- leftover horseradish sauce
- baby arugula
- thinly sliced beef tenderloin
- blue cheese
Preheat your oven to 400° and spray a large rimmed baking sheet with olive oil.
Slice a 13 ounce French baguette into 1/4-inch (or approximately) and place on the prepared pan. My baguette turned out to be exactly 36 slices. Spray the tops of the bread with olive oil before baking on the middle rack for 4 to 6 minutes.
Top each crostini with a dollop of horseradish sauce.
Then a few leaves of baby arugula. This adds a delicious peppery bite.
Lastly, top each one wit a thin slice of beef tenderloin, a shard of blue cheese and chives that were snipped about 1-inch in length.
I love these bites! The zippy horseradish, earthy beef and pungent blue cheese with the peppery arugula is incredible! And goes great with red wine and the best of friends.
