Curried Chicken Salad with Grapes + Cashews

This curried chicken salad is loaded with grapes, cashews, celery, green onions and cilantro, tossed in a bright curry dressing.

Remember that beautiful chicken I roasted a week or so ago? Well after it cooled, I quickly shredded every bit of it up into bite-size pieces all for the sake of this gorgeous salad. You could purchase a rotisserie chicken if you wish to save time, but why? Home-roasted is where it’s at.

This curried chicken salad is loaded with grapes, cashews, celery, green onions and cilantro, then tossed in a bright curry dressing. I like to make the dressing a smidgen healthier by swapping out some of the mayonnaise for Greek yogurt (I like to use Fage) and I spice up with ground curry, turmeric and ginger. A little sweetness from honey, tang from lime juice and a little heat from aleppo pepper.  Then I tuck and wrap all of that deliciousness in romaine lettuce leaves and inhaaaaale it in on bite (or two).

The color is insanely gorgeous. The flavor is spot on. And it tastes amazing.

To make the chicken salad dressing you’ll need mayonnaise, Greek yogurt, honey, lime juice, curry, turmeric, ginger, salt, pepper and  aleppo pepper.

In a mini food processor add the mayo and yogurt.

Drizzle in the honey…

Lime juice…

And allllll the spices.

Puree until smooth and the honey has worked its way through out. Scrape down the side and check to see if you want more honey or lime juice.

Ps. I could drink this golden goddess of dressings.

All that’s left to do is assemble the chicken salad.

In a large bowl combine: shredded chicken, grapes, celery, cashews and green onions.

Pour in alllllll of the curry dressing…

And I almost forgot the torn cilantro. Do NOT forget the cilantro.

Then I just covered it tightly with plastic wrap and refrigerated it for an hour or so.

FYI The grapes, cashews and dressing are pretty much my favorite parts.

And the whole crisp lettuce wrap thing. I do love me some lettuce wraps.

Curried Chicken Salad with Grapes + Cashews

This curried chicken salad is loaded with grapes, cashews, celery, green onions and cilantro, tossed in a bright curry dressing.

Yield: about 6-8 servings

Prep Time: 25 minutes

Cook Time: 0 (not including roasting the chicken)

Total Time: 25 minutes

Ingredients:

FOR THE DRESSING:

1/2 cup Mayonnaise

1/3 cup Greek Yogurt (I use Fage)

Juice of half a Lime

heaping 2 teaspoons Honey

4 teaspoons Curry Powder

1/2 teaspoon turmeric

1/4 teaspoon Aleppo Pepper, plus more for serving

1/4 teaspoon ground Ginger

1/2 teaspoon Kosher Salt

1/4 teaspoon ground Black Pepper

FOR THE SALAD:

1 cup halved Red Seedless Grapes

1/3 cup coarsely chopped salted and roasted Cashews

4 Green Onions, sliced (dark and light green parts only)

2 stalks Celery, sliced 1/4 of an inch thick

1/4 cup fresh Cilantro, roughly chopped

Romaine Lettuce Leaves, for serving

4 cups shredded pre-cooked Chicken (light and dark meat)

Directions:

In the bowl of a mini food processor add mayonnaise, yogurt, lime juice, honey, curry, turmeric, aleppo pepper, salt and pepper. Process until smooth scraping down the sides half way through until honey is mixed throughout.

In a large bowl combine the grapes, cashews, celery, onions, cilantro, chicken and all of the dressing. Taste and season with more salt and pepper if desired.

Spoon about 1/2 cup into lettuce leaves and sprinkle with more cilantro and aleppo pepper.

    I LOVE curry chicken salad with grapes in them. However, I use walnuts or pecans instead of cashews in mine. And I just do mayo or curry powder as the dressing – but I could see how a little honey would add just that extra touch of sweetness you might be missing from an accompanying chutney or something!!

    When I lived in Chicago we went to a restaurant that had the best curried chicken salad. It is one of my favorite lunches. This looks so great!
