Parmesan Garlic Chicken Drumsticks

It all started when I was making my meal menu/grocery list for the week and there I was… stuck! What to make tonight for dinner? Naturally I pulled up her blog and went recipe surfing. The first thing I clicked on was her Parmesan Garlic Chicken Wings! I was like “OH YEEEAAAH this is it!”  My girls will love it and so will my husband {win-win!!} It looked simple enough… and DELICIOUS! So I finished up the list and dragged my oldest out the door for some mommy-daughter grocery shopping bonding time!

I found almost everything on my list except for the chicken wings and basil {damn Sunday shoppers}! Luckily my family likes to garden, so I just hit my mom up for some of her fresh basil straight from her garden! SCORE! As for the wings, I just bought drumsticks instead… problem S-O-L-V-E-D! This is one of those meals you know is going to be yummy and perfect!! I was honestly so impressed with this recipe!

Here are is what you will need: Chicken Drumsticks, {fresh} Basil, {fresh} Parmesan Cheese, {fresh} Garlic, Olive Oil, Oregano {dried}, Rosemary {dried}, ground Cumin, Lawry’s Season Salt, and Kosher Salt.  Now just pretend that there are two cloves of garlic chilling by that basil… yes… I forgot it again… I swear I don’t do it on purpose…

The original recipe calls for wings, since I couldn’t find any thanks to all those dang Sunday shoppers… I substituted drumsticks which altered the cooking time a smidge. Next time I may just try wings, or thighs…who knows!? maybe a whole chicken… now wait a minute … that’s a great idea!


Here we have the cumin, oregano, salt and rosemary.


Here they are… all mixed up together… smelling pretty darn good!


I arranged the chicken on my largest baking sheet line with foil for easy clean up… CHEERS to easy clean up!!


Next I sprinkled on the seasoning mix that I just made until I used every last granule… Then I tossed the chicken into a preheated oven {425 degrees}.


Something about the way chicken smells while it’s baking brings me back to my youth… My mom makes a yummy baked chicken, you know the kind that is by feel and not so much a recipe card? That one I plan to share with you in the fall… why fall? Because I don’t remember her ever making it other than fall and winter time… I’d come home from school on a cold and rainy day and the house would fill up with this yummy smell…  hold up I got off track… I’ll save it for the fall!


I baked it off for about 40 minutes… The skin should be all golden and crispy but you will know it is done when you test it with a meat thermometer it should read 170 degrees, I just stick the thing in the thickest part and let it do its thing… bingo bango!


Measure out 3 tablespoon EVOO… I have this handy dandy measuring device that works really well!!


While the chicken is baking you can make the sauce… I say sauce because I’m at a loss for what you would call it… glaze maybe… heaven perhaps?!


Sorry garlic… forgot again…


Now I will have to smash and mince you… don’t be mad… Alright I’ll stop talking to food now.


Measure out the Lawry’s Season Salt. For those who have never tried this seasoning salt… shame on you! … jk… there are so many uses for Lawry’s! It’s great on fried eggs, meat and in a compound butter… the options are endless!! BUY IT! USE IT! LOVE IT!


Throw all of those plus the freshly grated Parmesan in to a small bowl…


Stir it up with a fork… or your finger… what ev… jk your finger would be a big NO-NO! Please don’t listen to me!


Spoon out even amounts all over the chicken…


Just kinda smooth it all over with the back of the spoon or a finger… just kidding that’s gross! {or you could just toss it all together!}

Parmesan Garlic Chicken Drumsticks

Yield: 4-6 servings

Ingredients:

1 teaspoon dried Oregano

1 teaspoon dried Rosemary

1/2 teaspoon ground Cumin

1 teaspoon Kosher or Sea Salt

2 1/2 - 4 pounds Chicken Drumsticks

3 tablespoons Extra-Virgin Olive Oil

2 tablespoons minced Fresh Basil

2 garlic cloves, smashed and finely minced

1/4 cup grated Parmesan Cheese

1/2 teaspoon Seasoning Salt (like Lawry's)

Directions:

Preheat oven to 425F.

In a small bowl, mix together the oregano, rosemary, cumin and salt. Lay the chicken wings on a baking sheet lined with foil and season the chicken wings with this mixture.

Bake the chicken drumsticks for 35-40 minutes or until a meat thermometer reads 170 degrees.

While the chicken is baking, mix together the oil, fresh basil, garlic, parmesan cheese and seasoning salt. When the chicken is cooked through, spoon the garlic/cheese/butter sauce onto the chicken and serve.

*because I used drumsticks I had to alter the recipe ever so slightly... like cooking time etc... but if you want to make the wing version check out http://www.steamykitchen.com/ for the recipe... it even comes with a yummy dipping sauce!

    I made this tonight with a few changes and think that a reduced balsamic vinegar would have made it Divine! Gonna definitely do that next time! Thanks for sharing!!

    I recently found your site when googling cauliflower recipes, but I hadn’t tried any recipes until tonight. This parm garlic chicken was excellent. I used breasts, thighs and drumsticks all on the bone and everyone loved it! Love the simple, fresh ingredients and look forward to making many more of your recipes. Thank you!
