Another day, Another Starbucks recreation.

Last month, my three sisters and I flew out of 3 different states to met up for a sister get-away in Clearwater, Florida to celebrate our oldest sister kelly’s 50th birthday. It was a short weekend trip, but we definitely made the most of it. Three days filled with lots of laughing, the best inside jokes, great food and drinks and meaningful conversations. We couldn’t have asked for a better weekend. It had been a few years since we all were together, so this definitely was a special trip we will always remember.

Thankfully, we all love coffee. And even more thankfully, our hotel was adjacent to a Starbucks where we would walk to every afternoon for coffee. Normally, I just order a vanilla oat milk latte. But after seeing Kelly order a pistachio latte… we all changed our order. It’s been an obsession ever since.

What Is A Pistachio Latte?

Only the most incredible coffee drink I’ve ever had. In it, (Starbucks version) steamed milk is combined with espresso and pistachio sauce and topped with a salted brown butter topping. Mine is similar but swapping pistachio sauce for a more natural approach by using pistachio butter. Something to keep in mind, is that because we are using a nut butter, there will/may be some settling – depending on how smooth you can process it. I personally didn’t find this to be bothersome or even noticeable.

To Make This Pistachio Oat Milk Latte You Will Need:

for the salted brown butter topping:

  • butter (unsalted) – Adds delicious nutty flavor when browned.
  • brown sugar (dark) – Lends caramel-like sweetness and texture when combined with the butter.
  • vanillaAdds and enhances flavor in this topping.
  • flaky saltGives this topping the perfect salty edge.

for the latte:

  • pistachio butterAdds richness and delicious nutty pistachio flavor.
  • sweetened condensed milkUsed for sweetening. Truth be told, I have made this myself but the effort vs buying organic with the same ingredients? worth it.
  • oat milkFor this I like Oatly barista blend. Or use milk of your choice. (more on milk below)
  • espresso shotOr use 2 to 3 ounces strong brewed coffee.

Make The Brown Butter Sugar Topping:

Add 1/2 tablespoon unsalted butter to a small skillet. Heat over medium-low to low until melted and the milk solids start to brown and become fragrant.

Remove off of the heat and add in 1/2 tablespoon dark brown sugar.

Stir to combine. Once cooled a bit, stir in a splash of vanilla extract and a pinch of flaky salt.

Set off to the side. It will solidify more as it cools.

Make The Pistachio Oat Milk Latte:

In a 10 ounce mug, add 1 tablespoon pistachio butter and 1 tablespoon sweetened condensed milk.

brew or pour in a shot of hot espresso.

Stir or blend until combined.

Keep in mind, because we are using a nut butter, there will be some settling.

Meanwhile, add 3/4 cup oat milk (I am using Oatly barista blend – not sponsored) or other milk that steams and froths well into a steamer/frother. My Keurig (linked in recipe) does both, heating and frothing. Alternatively you can use a frothing whisk to warm milk, whipping it until foamy.

WHAT IS THE BEST MILKS FOR FROTHING?

The best milk for frothing is heavy cream, half & half, whole milk, oat milk (try barista blend!), almond milk, coconut milk and soy milk.

Pour the warm steamed milk into your mug.

  • 1 splash vanilla

  • 1 tablespoon pistachio butter
  • 1 tablespoon sweetened condensed milk
  • 1 shot espresso
  • 3/4 cup oat milk, preferably Oatly barista blend or milk of choice
  • 1 pinch pistachios, chopped, for serving (optional)
