This Garlic Parmesan Peppercorn Salad Dressing is a deliciously creamy, garlicky and peppery salad dressing. Pour over your favorite salad greens!
I hope you don’t mind I’ve dedicated an entire post to a salad dressing. Also, I hope you don’t mind I just had my THIRD cup of coffee and I feel a bunch of run-on sentences in my future. So be warned.
If I haven’t said it enough, which I probably most likely have so I’m sorry to be a broken record here, but I love a good salad dressing. This also may come as a not-so-huge shock, but I prefer to make it myself. So far on this blog I’ve shared with you my homemade buttermilk ranch and that glorious creamy caesar, vinaigrette’s galore (like pear, blackberry and even a tomato one!).
I admit it… I’m a total salad dressing addict.
So as you can see I’ve dabbled in making a plethora of dressings in my day and I’m always on the search for something new to top my big bowl of greens with. Sooooo *cue yet another date night with my husband* There we were, out to dinner with our really good friends {Hi Mike and Heidi!} I ordered the Martha’s Vineyard salad and Pat the wedge. I was instantly jealous when his salad came out. There stood a big wedge salad with the most glorious creamy-garlicky dressing and then he proceeded to blanket the entire thing in black pepper {FYI he does that with just about everything that is put in front of his face}. So I took a big-o-bite and fell instantly in love with it, and I think you will too. A creamy homemade dressing that’s totally worth it… the garlic breath that is, promise.
I never did ask our waitress for how they made their salad dressing, so I just decided to try and create it on my own. Olive oil, garlic, white wine vinegar, black pepper and I decided to throw some Parm and mayo for the cream-factor.
Grab a small bowl or use a clean jar.
Squeeze the garlic into the bowl orrrr grab a knife and finely mince it all up.
Add in 2 tablespoons of white wine vinegar.
Drizzle the olive oil in a tiny steady stream while you whisk, whisk your heart out.
Season with a couple pinches of kosher salt and LOTS of black pepper.
Two tablespoons of grated Parmesan cheese…
Now add in a half cup of mayo. Since this was my first time making this and I was adding mayo by the tablespoon, eight was the lucky number… and by-the-way did you know 8 tablespoons is a half cup!? I swear I learn something new every day! 😉
Give it all a whisk until it’s creamy combined.
Taste and season your garlic parmesan peppercorn salad dressing with salt before you store it in an airtight jar for a few hours or overnight in the fridge so the flavors can meld.
Now you just need to grab some lettuce, a vegetable or two and smother it all in this Garlic Parmesan and Peppercorn Salad Dressing! Now I’ve eaten this everyday for the past week… and for some reason Pat won’t come near me… I wonder why that is? Hmmmmmmm 😉

Garlic Parmesan and Peppercorn Salad Dressing
Ingredients
- 2 cloves garlic, finely grated or squeezed through a garlic press
- 3 tablespoons white wine vinegar, or lemon juice
- 2 rounded tablespoons grated Parmesan cheese
- 3/4 teaspoon coarse freshly ground black pepper, more or less to taste
- 6 tablespoons extra-virgin olive oil
- 1/2 cup mayonnaise
- 1/4 to 1/2 teaspoon kosher salt, to taste
Instructions
- In a small bowl add garlic, vinegar, Parmesan and pepper.
- Drizzle in a steady stream of olive oil while whisking. Next, add in the mayo and stir to combine.
- Taste and season with salt before pouring the salad dressing into an airtight container and refrigerating for 30 minutes to 1 hour, or until ready to serve.

Looks delicious! How long do you think it’d last? It’s just me, so I wouldn’t want it to go bad before I can eat it all.
So far it’s going on a week… I just stir it up and it’s good to go! I’d say two to three weeks tops, but I’m weird when it comes to this stuff 🙂

Garlic + pepper in a dressing are the best things ever. Ever ever ever.
Garlic should be added to all foods/dressings, etc. in my opinion. Fresh ground pepper too. I’ve recently started to make my own dressings/vinaigrettes and love it.
As a fellow dressing addict, the first step is to happiness is NEVER apologise for more dressings!
I do a similar dressing but with lemon juice and minus the parm (I usually cube up cheese for my salad). I also find subbing in greek yogurt for mayo in creamy dressings works swimmingly. I don’t like mayo, so there is that, but the yogurt is still super creamy and gives it a little tang.

It sounds like we have the same taste 😉 I’m always looking for new salad dressings! I’m quite creative when it comes to the salad but I often forget that the dressing is an essential component that needs to be mixed up as well. I usually stick to EVOO and balsamic vinegar but given that I can store this in the fridge for a week or two it’ll probably become a new favorite of mine!

I was JUST thinking that I wanted to find a peppercorn-parm dressing and YAY, I saw this!! I am still a loyal SS reader and recipe-maker… I just don’t comment as much because, well, the babe keeps me busy and cooking and writing for the Food Hound just about maxes out my free time 🙂 But you are awesome and I’m a HUGE fan!! Why would we mind?! Im guilty of avoiding salad at all costs – and buying store brand dressing that ultimately expires long before I use it. This Parmesan and GARLIC AND peppercorn (be still my heart!) dressing sounds awesome. Now I need to just kick myself in gear and make a salad.
