I hope you don’t mind I’ve dedicated an entire post to a salad dressing. Also, I hope you don’t mind I just had my THIRD cup of coffee and I feel a bunch of run-on sentences in my future. So be warned.

If I haven’t said it enough, which I probably most likely have so I’m sorry to be a broken record here, but I love a good salad dressing. This also may come as a not-so-huge shock, but I prefer to make it myself. So far on this blog I’ve shared with you my homemade buttermilk ranch and that glorious creamy caesar, vinaigrette’s galore (like pear, blackberry and even a tomato one!).

I admit it… I’m a total salad dressing addict.

So as you can see I’ve dabbled in making a plethora of dressings in my day and I’m always on the search for something new to top my big bowl of greens with. Sooooo *cue yet another date night with my husband* There we were, out to dinner with our really good friends {Hi Mike and Heidi!} I ordered the Martha’s Vineyard salad and Pat the wedge. I was instantly jealous when his salad came out. There stood a big wedge salad with the most glorious creamy-garlicky dressing and then he proceeded to blanket the entire thing in black pepper {FYI he does that with just about everything that is put in front of his face}. So I took a big-o-bite and fell instantly in love with it, and I think you will too. A creamy homemade dressing that’s totally worth it… the garlic breath that is, promise.

I never did ask our waitress for how they made their salad dressing, so I just decided to try and create it on my own. Olive oil, garlic, white wine vinegar, black pepper and I decided to throw some Parm and mayo for the cream-factor.

Grab a small bowl or use a clean jar.

Squeeze the garlic into the bowl orrrr grab a knife and finely mince it all up.

Add in 2 tablespoons of white wine vinegar.

Drizzle the olive oil in a tiny steady stream while you whisk, whisk your heart out.

Season with a couple pinches of kosher salt and LOTS of black pepper.

Two tablespoons of grated Parmesan cheese…

Now add in a half cup of mayo. Since this was my first time making this and I was adding mayo by the tablespoon, eight was the lucky number… and by-the-way did you know 8 tablespoons is a half cup!? I swear I learn something new every day! 😉

Give it all a whisk until it’s creamy combined.

Taste and season your garlic parmesan peppercorn salad dressing with salt before you store it in an airtight jar for a few hours or overnight in the fridge so the flavors can meld.

Now you just need to grab some lettuce, a vegetable or two and smother it all in this Garlic Parmesan and Peppercorn Salad Dressing! Now I’ve eaten this everyday for the past week… and for some reason Pat won’t come near me… I wonder why that is? Hmmmmmmm 😉

Garlic Parmesan and Peppercorn Salad Dressing
Yield: about 1 cup

Garlic Parmesan and Peppercorn Salad Dressing

A deliciously creamy, garlicky and peppery salad dressing.

Prep Time 5 minutes
Additional Time 1 hour 30 minutes
Total Time 1 hour 35 minutes

Ingredients

  • 1 to 2 cloves peeled fresh garlic, finely grated or squeezed through a garlic press
  • 3 tablespoons white wine vinegar or lemon juice
  • 2 (heaping) tablespoons grated Parmesan cheese
  • 1/4 to 1 teaspoon fresh, coarsely-ground black pepper (more or less to taste)
  • 6 tablespoons extra-virgin olive oil
  • 1/2 cup mayonnaise
  • 1/4 to 1/2 teaspoon kosher salt, to taste

Instructions

  1. In a small bowl add garlic, vinegar, Parmesan and pepper.
  2. Drizzle in a steady stream of olive oil while whisking. Next, add in the mayo and stir to combine.
  3. Taste and season with salt before pouring the salad dressing into an airtight container and refrigerating for 30 minutes to 1 hour, or until ready to serve.
