Soft and chewy. Chocolaty and chippy… these cookies are adorable and can fit easily into your mouth in one bite.

Since school is now in full effect, I’m packing lunches… twice, daily. I always like to put a little something extra in my girl’s lunches. Whether it is a love note… or a few cookies, what kid doesn’t love a little surprise in their lunch bag?

Truth be told, I hate packing lunches. Like reeeeeeeeally can’t stand it. One kid likes PB&J the other would survive on granola bars and cheese quesadillas if I’d let her. But one thing they both can agree on is cookies.

Of course you could whip up your favorite chocolate chip cookie recipe and just make them mini, orrrrr maybe you have a French aunt name Nestle Tooolhouse who passed her recipe on down to you? #friendsreference If you have a fave, use it! But I like this recipe for it yields soft and chewy cookies… and if you eat an entire bowl, who cares? They’re bite-size!

In a bowl beat the stick of butter until soft and pale yellow. Add in both sugars and mix on medium speed until combined.

Crack in the egg, add in a teaspoon of vanilla extract and mix, mix, mix.

Add in the cup and a quarter of unbleached all-purpose flour and mix until just combine. Throw in a cup of chocolate chips… I like milk chocolate, but semi sweet or dark would be just as scrumptious. Mix with a rubber spatula just until the chocolate chips are throughout.

Measure a round teaspoon of cookie batter and drop them onto a lined sheet pan.

Roll the cookie dough into balls and gently press them so they are a little flatter.

Bake the mini cookies in a preheated 325° for 8-10 minutes or until the edges are slightly golden.

Serve these mini chocolate chip cookies with an ice cold glass of milk or wrap up tightly and sneak them into your kids {or hubs/wifey’s} lunch.

Mini Chocolate Chip Cookies

Soft, chewy with just the right amount of chocolate chips! Perfect bite-size morsels! Yields 36 bite-size cookies.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup light brown sugar, lightly packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • cup unbleached all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon baking soda
  • 1 cup mini chocolate chips, milk, semi-sweet or dark

Instructions 

  • Line a rimmed baking pan and preheat your oven to 325 degrees.
  • In a bowl blend the stick of butter until creamy and light yellow. Add in the sugars and blend.
  • Add in the one egg and teaspoon of pure vanilla extract and blend on low until combined.
  • Next, add in the flour, salt and baking soda and mix just until combined.
  • Lastly, add the cup of chocolate chips and blend by hand with a spatula.
  • Measure a rounded teaspoon of cookie dough and place an inch apart on the prepared pan. Bake for 8-10 minutes in your preheated or until the edges are golden.
  • Let cool for a few minutes before transferring to a wire rack to finish cooling.
