Because I had cauliflower in the fridge…

I also had this yummy Kerrygold cheddar and I needed a vessel to get it to my mouth, and pronto.

Who doesn’t keep bacon fat in their fridge?

And all good recipes are seasoned simply with salt and pepper.

Now let’s roast some cauliflower shall we?

Start by removing as much core as you can.

Then, one by one, slice off the cauliflower florets. There could very well be an easier way to do this… So just do whatever way you know best!

Trim any large ones and toss all of them into a large bowl.

Drizzle with some warmed bacon renderings. Why bacon fat? Well, sometimes I just wanna switch things up, and plus bacon fat is yummy!

Season the cauliflower with sea salt and fresh cracked black pepper, then stick them in the preheated 450 degree oven and roast until tender, about 18-20 minutes.

After they’ve roasted, scoot them into the center of the sheet pan.

Top with the cup of freshly grated yummy Kerrygold cheddar cheese and place back into the oven until melted, about 2-3 minutes or so.

Once the cheddar is melted toss around to get all the cauliflower covered with cheese.

Try to resist from snagging a few. Wait, never mind, go ahead! It’s pretty impossible to resist.

Roasted Cheddar Cauliflower

You guys. This Roasted Cheddar Cauliflower will blow your mind! Sharp white cheddar melted all over roasted cauliflower, doesn't get better than that! Easy and delicious!

Yield: 4 servings

Prep Time: 15 minutes

Cook Time: about 20 minutes

Total Time: about 35 minutes

Ingredients:

1 large head of cauliflower, cored and cut into medium florets

2 tablespoons warmed bacon fat

a few pinches of kosher salt

a few turns of freshly ground black pepper

1 cup freshly grated white cheddar

Directions:

Preheat your oven to 450 degrees.

In a large bowl toss the cauliflower florets with the two tablespoons of bacon fat.

Scatter the florets on a rimmed sheet pan {preferably aluminum}, and season with sea salt and pepper. Cook until tender, about 20 minutes, tossing halfway through.

Finally scoot the cauliflower to center of sheet and top with the cup of grated cheddar.

Return to oven and cook until cheese melts, about 2 minutes. Toss again before serving.

    Besides, steak, we love cauliflower. Roasting it is my favorite way to enjoy it. Who knew that adding bacon fat could be so delicious? My husband is a bacon fanatic. Healthy? Well, sometimes we just have to throw caution to the wind and enjoy! Nice photos!

    I am not a a big fan of cauliflower, but I have never had it roasted. I wonder if I would like it this way? I love roasted veggies SO much, I think I am going to try it.

    I came here for healthy cauliflower, and was distracted by red meat! This sounds like a great side dish, Im going to have to sneak this in and see if the BF picks around an entire tray of cauliflower.
