Honey Almond Granola

Clusters of honey-almond-granola goodness. My favorite ways to enjoy this granola is to have it in a bowl with almond milk and sliced bananas or with vanilla kefir and fresh blueberries and strawberries. Yields 2 cups or 8 (1/4 cup) servings

Ingredients

  • coconut oil spray for greasing pan
  • 1/4 cup honey
  • 2 tablespoons butter melted
  • 1/2 teaspoon pure vanilla extract
  • cups old fashioned rolled oats
  • 1/2 cup whole wheat flour
  • 1/3 cup sliced almonds
  • 1/4 teaspoon kosher salt

Instructions

  • Preheat oven to 350° and grease a small baking sheet with coconut oil or butter.
  • Stir together the honey, butter and vanilla. In a separate bowl combine; almonds, flour, oats, salt and stir.
  • Add honey mixture to the oat mixture and stir until combined.
  • Spread the oat mixture onto prepared pan and bake for 10 minutes.
  • Remove, toss and place back into oven for 5-8 more minutes.
