You guys. This Roasted Cheddar Cauliflower will blow your mind! Sharp white cheddar melted all over roasted cauliflower, doesn’t get better than that!
Except for a nice, fat, juicy steak.
Now because we we’re grilling big juicy steaks…
Because I had cauliflower in the fridge…
I also had this yummy Kerrygold cheddar and I needed a vessel to get it to my mouth, and pronto.
Who doesn’t keep bacon fat in their fridge?
And all good recipes are seasoned simply with salt and pepper.
Now let’s roast some cauliflower shall we?
Start by removing as much core as you can.
Then, one by one, slice off the cauliflower florets. There could very well be an easier way to do this… So just do whatever way you know best!
Trim any large ones and toss all of them into a large bowl.
Drizzle with some warmed bacon renderings. Why bacon fat? Well, sometimes I just wanna switch things up, and plus bacon fat is yummy!
Season the cauliflower with sea salt and fresh cracked black pepper, then stick them in the preheated 450 degree oven and roast until tender, about 18-20 minutes.
After they’ve roasted, scoot them into the center of the sheet pan.
Top with the cup of freshly grated yummy Kerrygold cheddar cheese and place back into the oven until melted, about 2-3 minutes or so.
Once the cheddar is melted toss around to get all the cauliflower covered with cheese.
Try to resist from snagging a few. Wait, never mind, go ahead! It’s pretty impossible to resist.
These are delicious. Truly.

The Roasted Cheddar Cauliflower definitely rounds out a steak dinner, but the cauliflower works next to pretty much anything. I love them. A lot.
