Grilled Pesto & Mozzarella Sandwich aka “The Special” is a family favorite grilled cheese in our home. What more could you ask for? Pesto + mozzarella = passout deliciousness!!

When I made this a few years ago while my best friend and her son Vito were over the kids LOVED IT!  As we were sitting at the table eating, I told Vito that this sandwich needs a name! He looked at me and said ever so nonchalant “how about ‘The Special’?” And from that moment that is what we call it. I think it fits because it’s pretty darn special alright.


They were over today visiting and I whipped these up, camera in hand, super fast and took the post pictures as I went. They brought sliced, fresh yellow and orange peppers with them which went great! So here’s to you Vito for coming up with a perfect name for this awesome grilled cheese!

Here is all you need to make these simple yummy sandwiches; Sourdough or if you can find it try English Muffin Bread, salted Butter, Pesto and fresh Mozzarella.

Thinly spread the butter on one side of each piece of bread and heat up your pan.

Thinly slice up your fresh mozzarella. You may have some left over mozzarella but that is meant for snacking on!

When your pan is preheated lay down the first slice of bread {butter side down} and top with the fresh mozzarella.

Next spread a tablespoon of the pesto on top of the mozzarella and place the next slice of bread {butter side up}.

Flip when crispy and golden then repeat with the remaining sandwiches!

Cut in half and serve!

"The Special" Grilled Pesto & Mozzarella Cheese Sandwich

Grilled Pesto & Mozzarella Sandwich aka "The Special" is a family favorite grilled cheese in our home. What more could you ask for? Pesto + mozzarella = passout deliciousness!!

Cook Time 8 minutes
Additional Time 12 minutes
Total Time 25 minutes


  • 8 slices sourdough or english muffin bread
  • 4 tablespoons basil pesto (or use your favorite)
  • 4 tablespoons salted butter, softened
  • 8 slices of mozzarella cheese


Preheat your pan over medium low heat.

Spread evenly and thinly about a tablespoon of butter per (2) slice of bread.

Lay the bread {butter-side down} on to the preheated pan.

Layer Mozzarella and a tablespoon of pesto.

Top with the second slice of bread {butter-side} up.

Flip when nice and golden and repeat.
