Cajun Seasoned Potatoes

Spicy and crisp, these roasted cajun seasoned potatoes are simple to through together and taste amazing. Serve with chicken, steak or pork.

Ingredients

  • 3 pounds baby Yukon gold potatoes
  • 1 tablespoon light olive oil
  • tablespoons Cajun Seasoning
  • kosher salt to taste
  • 2 tablespoons chopped fresh parsley leaves

Instructions

  • Preheat an aluminum sheet pan in your oven to 350°.
  • Slice your potatoes in half on a diagonal and place into a large bowl.
  • Drizzle with a good amount of olive oil and sprinkle with the tablespoon and a half of Cajun seasoning and the salt.
  • Toss and spread out onto the hot sheet pan. Place back into the oven for 60 minutes, tossing every twenty minutes.
  • Once crispy and fork tender, remove and let cool slightly. Toss the potatoes with chopped parsley and serve.
