Blueberry Lemonade Spritzers

Your next celebration needs these non-alcoholic Blueberry Lemonade Spritzers! Fresh blueberries, lemonade and some fizz for a refreshing beverage! Summer in a glass.

2 cups fresh blueberries 3 to 4 pieces lemon peel 1 cup fresh squeezed lemon juice 6 cups club soda or seltzer 1 recipe for wine simple syrup optional
Add the blueberries along with the lemon peel and juice to a saucepan.
Bring to a boil and simmer until the berries just begin to soften and burst.
Remove the lemon peel and carefully spoon in the berries and juice into a food processor.
Puree until smooth and then strain through a mesh strainer into a large bowl or measuring cup and discard the solids.
Slowly add in the club soda and stir.
Add ice cubes to glasses and add a couple tablespoons of the wine syrup {if using}. Pour blueberry lemonade over top and stir before serving.
Garnish with fresh mint sprigs.
