Ingredients

  • 3 pounds russet potatoes scrubbed well
  • 8 tablespoons unsalted butter
  • cup half & half
  • 2 teaspoons kosher salt plus more to taste
  • 1/2 teaspoon white pepper
  • 8 ounces diced cooked lobster
  • 2 tablespoons salted butter melted
  • fresh snipped chives

Instructions

  • Place the scrubbed potatoes into a large stock pot and fill with water covering the potatoes by 2-inches. Bring to a boil and cook the potatoes until a fork glides effortlessly through the middle. About 30 to 40 minutes.
  • Drain the potatoes into a large colander and when safe to handle, peel the outer skin.
  • Squeeze the potatoes through a potato ricer back into the pot. Add 8 tablespoons of butter, half & half and salt and white pepper. Stir with a wooden spoon or rubber spatula until combined.
  • Fold in the lobster meat and once hot, serve with two tablespoons butter melted on top with fresh snipped chives.
