This homemade Southwest Dressing is so flavorful and will elevate your salad to the next level. Chipotles in adobo and fresh lime juice blended with spices and honey in a creamy luscious dressing. This recipe yields about 1 cup.

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons olive oil
  • 1 tablespoon honey up to 2 tablespoons
  • 1 medium lime juiced
  • 1 medium chipotle (in adobo)
  • 2 teaspoons adobo sauce from canned chipotles
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried cilantro
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 to 3/4 teaspoon kosher salt more or less to taste
  • 1/2 teaspoon freshly ground black pepper more or less to taste
  • 1/8 teaspoon cayenne pepper more or less to taste

Instructions

  • To a high-powered blender add mayonnaise, sour cream, olive oil, honey, lime juice, chipotle pepper plus the adobo sauce, apple cider vinegar, paprika, chili powder, ground cumin, dried cilantro, garlic and onion powder, kosher salt, black pepper, and cayenne pepper.
  • Secure the lid and blend until all ingredients are incorporated and the dressing is creamy and smooth.
  • Should keep for a week or so in the fridge.
