Cheesy Chicken One-Pot Pasta

This Cheesy Chicken One Pot Pasta recipe is cozy and ridiculously easy. Cooked ground chicken, cherry tomatoes and garlic simmer with penne pasta in a creamy tomato sauce. All of this is done in one skillet making this pasta dish perfect for any night of the week. Yields 6 servings.

Ingredients

  • 2 teaspoons olive oil
  • 1 medium shallot finely chopped
  • 1 pound ground chicken I use 92/8 but can use 98/2 lean
  • 4 cloves fresh garlic sliced or finely chopped
  • 1 cup halved cherry tomatoes
  • 2 teaspoons italian seasoning homemade or store-bought
  • 1/4 to 1/2 teaspoon red pepper flakes or to taste
  • 1/2 teaspoon kosher salt
  • 8 ounces penne pasta I use Barilla Protein+ (see notes)
  • 2 cups chicken bone broth
  • 1 cup marinara homemade or store-bought
  • 1/2 cup heavy cream
  • 4 ounces mozzarella shredded
  • 1/4 cup torn fresh basil plus more for serving (optional)
  • 1/4 cup parmesan cheese for serving

Instructions

  • In a large, deep-sided skillet, add olive oil, shallot and a pinch of kosher salt. Heat over medium-low, stirring often until soft. About 5 minutes.
  • Add in ground chicken, using a spatula to break up into crumbles. Cook until no longer pink and fully cooked. Then add in tomatoes, sliced garlic, italian seasoning, red pepper flakes and kosher salt. Stir and cook until the tomatoes soften and burst. About 8 to 10 minutes.
  • Next, add in the penne, broth, marinara and heavy cream. Stir, cover and bring to a simmer on high heat. Then uncover, reduce heat to medium-high and continue to cook until the pasta is tender, about 12 mintues.
  • Add in the mozzarella and fresh basil and stir until the cheese has melted.
  • Divide among pasta bowls and top with fresh basil and some parmesan cheese.
