Whether served as an appetizer, a side dish or a meatless main dish, Air Fryer Corn Ribs are a deliciously messy and perfect for an outdoor gathering. Quartered sweet corn is brushed with a 7-spice seasoned oil and air fried until tender and golden. Serve drizzled with a smoky adobo crema and sprinkled with minced cilantro and queso fresco. Pick up and eat as you would any rib!

Ingredients

FOR THE ADOBO CREMA:

  • 6 tablespoons mayonnaise
  • 1/4 cup plain nonfat greek yogurt
  • 3 tablespoons adobo sauce from canned chipotle peppers
  • 1 medium lime juiced
  • salt to taste

FOR THE CORN RIBS:

  • 1 teaspoon lemon pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon chipotle powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 pinch fine sea salt
  • 1/4 cup extra light olive oil
  • 3 ears sweet corn quartered
  • crumbled queso fresco cotija or feta, for serving
  • minced cilantro for serving

Instructions

  • In a bowl, measure and add the mayo, plain greek yogurt, adobo sauce, lime juice and salt - to taste. Cover tightly and refrigerate until ready to serve.
  • Next in a cup or bowl, measure and add the lemon pepper, smoked paprika, chili powder, chipotle powder, garlic powder, onion powder, ground black pepper and a few pinches fine salt and stir in the olive oil.
  • Cut the corn into quarters by standing the corn upright and using a sharp knife to carefully cut in half, by rocking the knife back and forth. Don’t be shocked if one breaks. It happens! Then cut the halves in half by placing them flat, kernel side facing up.
  • Brush the seasoned oil on all sides of the corn, working the spices into the kernals.
  • Preheat your air fryer to 400℉ (or 200℃) - depending on your make and model.
  • Work in batches, air frying for 5 minutes. Turn the corn over and continue to air frying for 4 more minutes or until slightly cripsy and golden in spots.
  • Pile onto a plater, season with a little finely ground salt, drizzle with some of the adobo mayo and sprinkle with crumbled cheese of choice and minced cilantro.

Notes

If serving as a meatless main dish, the serving size changes to 2 or 6 ribs per person.
