Spicy and crisp, these roasted cajun seasoned potatoes are simple to through together and taste amazing. Serve with chicken, steak or pork.

- 3 pounds baby Yukon gold potatoes
- 1 tablespoon light olive oil
- 1½ tablespoons Cajun Seasoning
- kosher salt to taste
- 2 tablespoons chopped fresh parsley leaves
Preheat an aluminum sheet pan in your oven to 350°.
Slice your potatoes in half on a diagonal and place into a large bowl.
Drizzle with a good amount of olive oil and sprinkle with the tablespoon and a half of Cajun seasoning and the salt.
Toss and spread out onto the hot sheet pan. Place back into the oven for 60 minutes, tossing every twenty minutes.
Once crispy and fork tender, remove and let cool slightly. Toss the potatoes with chopped parsley and serve.
