Grilled Halloumi Vegetable Skewers

Grilled halloumi vegetable skewers are fun and delicious vegetarian option this summer! Halloumi cheese is threaded on to skewers with summers best produce that has marinated in homemade Greek dressing and then grilled until golden and caramelized. I like to serve with toasty warm pita and homemade tzatzki!

Ingredients

  • 2 medium zucchinis sliced into half-moons
  • 2 medim yellow squash sliced into half-moons
  • 1 red onion cut into chunks
  • 1 sweet onion cut into chunks
  • 1 pint cherry tomatoes
  • 1 recipe Greek dressing
  • 1 pound halloumi cut into large uniform pieces
  • lemon wedges for serving
  • mint
  • parsley
  • homemade tzatziki
  • 2 pita cut in half

Instructions

  • Clean your grill grates and brush with oil before preheating to medium.
  • Place the vegetables into a large bowl and toss with dressing. Thread vegetables along with 2 to 3 pieces of halloumi onto metal skewers.
  • Place skewers onto your preheated grill for 3-5 minutes, turning once when grill marks appear.
  • Remove skewers from the grill, squeeze fresh lemon juice over top and serve immediately on warm pita with a dollop (or two) or homemade tzatziki.
  • sprinkle with minced mint and parsley

Notes

*keep vegetables pretty uniform to the halloumi to insure even cooking
