Classic Tomato Sandwich

When your garden hands you tomatoes, make a classic Tomato Sandwich! The ingredients are simple and it only takes minutes to make, however this sandwich is incredibly delicious and a great way to use up those tomatoes on the counter. Yields 2 sandwiches.

Ingredients

  • 2 medium tomatoes beefsteak or heirloom, sliced ¼ to ½-inch thick
  • 4 slices white bread or bread of choice
  • 1 tablespoon mayonnaise
  • kosher salt to taste
  • lots of freshly ground black pepper to taste

Instructions

  • Using a serrated knife, cut the tomatoes into thick slices.
  • Toast your bread (optional). Then slather the inside of 1 slice (per sandwich) with 1½ teaspoons mayonnaise, or more or less to taste. Season with a little salt and pepper.
  • Top with several slices of tomato, cutting them in half as needed to fit. Then season the tomatoes with salt and lots of freshly ground black pepper.
  • Replace the top slice of toast/bread, gently press while cutting the sandwich in half. Serve with potato chips if desired.
