Grilled Turkey Pesto Sandwich is your new favorite sandwich! Sliced grilled turkey, homemade pesto, tomato and fresh mozzarella is sandwich between toasted sour dough bread.

1ΒΌ pounds turkey breast tenderloins 2 teaspoons olive oil extra light 2 tablespoons adobo seasoning see notes 1/2 teaspoon black pepper freshly ground, plus more for tomatoes 8 slices sourdough bread toasted 4 tablespoons basil pesto 4 tablespoons mayonnaise or use smashed avocado 1 medium tomato or 8 slices 1 pinch kosher salt 12 slices fresh mozzarella 4 leaves romaine lettuce
Preheat outdoor grill to 500β (or 260β).
Meanwhile, toss tenderloins in olive oil. Season with adobo and black pepper, toss to coat evenly.
Once the grill is hot, grill the seasoned tenderloins for 3 to 4 minutes a side or until fully cooked and no longer pink. About 8 minutes.
Remove grilled turkey to a cutting board and ligthly cover with foil and rest for 5 minutes before slicing.
Toast your bread. Spread the inside of one slice with pesto and the other with mayo or substitute with smashed avocado.
Top the pesto side with tomato, salt and pepper and fresh mozzarella. Top the mayo or avocado side with sliced turkey and lettuce.
Put the sides together, cut in half and enjoy!
