Drain chickpeas and add to a sauce pan with baking soda. Cover with water and bring to a simmer, reduce heat to medium-low and simmer for 25 minutes. Drain and add to blender.
To the beans, add desired amount of garlic (2 to 4 large cloves), tahini, lemon juice, salt, cumin and water (start with 1/4 cup water and add more as needed).
Blend until smooth.
