  • nonstick spray olive oil or avocado oil
  • 2 tablespoons basil pesto store bought or homemade
  • 2 eggs
  • 1 pinch kosher salt
  • black pepper freshly ground
  • parmesan cheese freshly grated, for serving
  • 1 pinch red pepper flakes for serving (optional)

  • Lightly spray a 10-inch skillet with nonstick spray and heat on medium to medium-low.
  • Add the pesto and wait for it to start bubbling.
  • Crack the eggs into the pesto and cook until just about set.
  • For sunny side up, cover with a lid and cook until the whites are set.

Notes

I served these pesto eggs with leftover crispy potato wedges and with a slice of buttered sourdough bread.
