Maple Bourbon Banana Pudding Cake

Maple Bourbon Banana Pudding Cake is an incredibly easy and cozy fall dessert. Imagine a moist banana cake that melts into a maple-y, bourbon and brown sugar pudding! Delicious served warm with a scoop of vanilla ice cream. Serves 6 in under an hour.

Ingredients

  • cups unbleached all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon nutmeg freshly grated
  • 1/2 teaspoon kosher salt
  • 1 large (ripe) banana
  • 1/2 cup milk
  • 1/4 cup unsalted butter melted and cooled slightly
  • 1 teaspoon pure vanilla extract
  • 1/2 cup light brown sugar
  • 1/2 cup hot water
  • 1/2 cup maple syrup see notes
  • 2 tablespoons bourbon
  • 1/4 cup pecans coarsely chopped
  • 1/4 cup walnuts coarsely chopped

Instructions

  • Preheat your oven to 350℉ (or 180℃) and lightly grease a 3½-quart baking dish.
  • To a mixing bowl, measure and add the flour, sugar, baking powder, nutmeg and salt. Whisk to combine.
  • In a separate mixing bowl, mash the banana and add the milk, melted butter and vanilla. Pour this into the dry ingredients and use a spatulta to combine.
  • Pour the cake batter into the prepared pan and smooth the top with your spatula.
  • Then In a smaller bowl, add the light brown sugar, hot water, maple syrup and bourbon. Stir to combine and then pour over the cake. DO NOT STIR.
  • Sprinkle with the chopped nuts and bake on the middle rack of your preheated oven for 35 to 40 minutes, rotating the pan halfway through to ensure even baking.
  • Remove and allow to cool slightly before serving with a scoop of vanilla ice cream.

Notes

Try to use good quality, real maple syrup.
