Maple Bourbon Banana Pudding Cake is an incredibly easy and cozy fall dessert. Imagine a moist banana cake that melts into a maple-y, bourbon and brown sugar pudding! Delicious served warm with a scoop of vanilla ice cream. Serves 6 in under an hour.
Preheat your oven to 350℉ (or 180℃) and lightly grease a 3½-quart baking dish.
To a mixing bowl, measure and add the flour, sugar, baking powder, nutmeg and salt. Whisk to combine.
In a separate mixing bowl, mash the banana and add the milk, melted butter and vanilla. Pour this into the dry ingredients and use a spatulta to combine.
Pour the cake batter into the prepared pan and smooth the top with your spatula.
Then In a smaller bowl, add the light brown sugar, hot water, maple syrup and bourbon. Stir to combine and then pour over the cake. DO NOT STIR.
Sprinkle with the chopped nuts and bake on the middle rack of your preheated oven for 35 to 40 minutes, rotating the pan halfway through to ensure even baking.
Remove and allow to cool slightly before serving with a scoop of vanilla ice cream.
