Ingredients

  • 1 large English cucumber seeded and sliced ¼-inch thick
  • 1 pound campari tomatoes quartered
  • 1/2 red onion sliced thin
  • 1 clove garlic large and finely minced
  • 1/2 medium lemon juiced
  • 2 teaspoons olive oil
  • 3/4 teaspoon dried parsley see notes
  • 1/2 teaspoon oregano see notes
  • 2 pinches kosher salt or to taste
  • black pepper freshly ground, to taste
  • 1 tablespoon fresh mint chopped

Instructions

  • In a large mixing bowl, combine the cucumber, tomato, onion, lemon juice, olive oil, parsley, oregano, salt and pepper and fresh mint in a mixing bowl.
  • Toss to combine.
  • Let sit for 30 minutes to an hour so the flavors can develop or refrigerate until ready to serve.

Notes

*Measure the dried herbs into your palm. Pinch some of the herbs in-between your fingers and rub together and into the bowl.
