Roasted Cheddar Cauliflower

You guys. This Roasted Cheddar Cauliflower will blow your mind! Sharp white cheddar melted all over roasted cauliflower, doesn't get better than that! Easy and delicious!

Ingredients

  • 1 head cauliflower cored and cut into medium florets
  • 2 tablespoons bacon fat warmed
  • 2 pinches kosher salt
  • freshly ground black pepper to taste
  • 1 cup grated white cheddar

Instructions

  • Preheat your oven to 450°.
  • In a large bowl toss the cauliflower florets with the two tablespoons of bacon fat.
  • Scatter the florets on a rimmed sheet pan {preferably aluminum}, and season with sea salt and pepper. Cook until tender, about 20 minutes, tossing halfway through.
  • Finally scoot the cauliflower to center of sheet and top with the cup of grated cheddar.
  • Return to oven and cook until cheese melts, about 2 minutes. Toss again before serving.
