Add the sugar and heavy cream to a large liquid measuring cup. Whisk until the sugar is dissolved. Next measure and pour in the milk, coffee and vanilla. Stir, cover and chill in the fridge for at least an hour.
Pour the ice cream base into your ice cream maker. Following the instructions to your ice cream maker, mix until thick and semi-frozen. Then mix in the chocolate chips.
Pour into a freezer safe container, cover and freeze for 4-6 hours or overnight.
Before serving, set out on the counter for 20-25 minutes before scooping.
