Crispy, crunchy, cilantro-y, light, refreshing, healthy and pretty. Can I squeeze in another adjective here? Oh-muh-goodness it's so delicious and perfect, and the dressing is easy and fresh. Yields 5 cups or 10 (1/2 cup) servings.

Vinaigrette:
1/4
cup
fresh lime juice
1½
teaspoons
agave
or sugar

tablespoons
olive oil
Slaw:
2
cups
thinly sliced green cabbage
2
cups
thinly sliced purple cabbage
2
carrots
peeled and julienned
3
green onions
sliced thin on an angle
1/2
cup
coarsely chopped cilantro
kosher salt
to taste

Instructions
Add the lime juice and agave into a large bowl and slowly pour in the olive oil while whisking.
Next, add in the cabbages, carrots, green onions and cilantro. Toss to combine, taste and season with salt as desired.
Serve immediately.
Notes
If making this slaw in advance, keep the dressing separate. Refrigerate until ready to toss together and serve.
