Strawberry Açaí Smoothie + Chocolate Chia Pudding Cups
A delicious snack/breakfast/dessert with all the nutritional benefits from the chia seed, chocolate protein powder (thank you Bob's Red Mill!), superfruit (açaí berry with guarana) smoothie pack (thank you Sambazon!), pomegranate juice and fresh fruit. Even the cacao nibs are a superfood. You will love this!
FOR THE CHOCOLATE CHIA PUDDING: 1/4 cup chia seeds I use Bob's Red Mill 1 tablespoon pure maple syrup 2 scoops Chocolate Protein Powder (I'm using Bob's Red Mill) 1 tablespoon natural cocoa powder 1½ cups toasted coconut almond milk or milk of your choice FOR THE STRAWBERRY AÇAÍ SMOOTHIE: 1 pouch Sambazon Açaí original blend 1/4 cup pomegranate juice 6 large strawberries 1 medium banana
FOR THE CHOCOLATE CHIA PUDDING:
Place the chia seeds into a medium bowl. Add in maple syrup, protein powder and cocoa powder. Whisk while pouring in the almond milk. Cover and refrigerate for a few hours or overnight.
Once thick, puree in a high speed blender until smooth. Divide into cups and place in your refrigerator.
Rinse your blender out well.
FOR THE STRAWBERRY AÇAÍ SMOOTHIE:
Place the açaí pouch, juice, strawberries and banana into your high speed blender. Blend on high speed until smooth.
Pour the smoothie mixture on top of the chia pudding and sprinkle with toasted coconut, cacao nibs and sliced strawberries and/or bananas, granola or more chia seeds.
