In this fancy three-cheese grilled cheese sandwich you'll find not one, but THREE cheeses; sharp Vermont white cheddar, Parmesan Reggiano and blue cheese!

Ingredients

  • 8 slices Italian bread
  • 4 tablespoons salted butter
  • 1/2 cup Vermont white cheddar cheese grated
  • 1/4 cup Parmesan Reggiano cheese grated
  • 1/4 cup blue cheese freshly crumbled

Instructions

  • Add the butter to a large skillet or griddle and heat on medium. If using a griddle preheat to 375℉ (or 190℃). 
  • Once the butter is melted, place two slices down and press into the butter. Immediately top with the white cheddar, parmesan and crumble the blue cheese over top. Top with more white cheddar and place the second slice of bread on top. Cover and cook until the bottom slice is golden brown, then flip, cover and repeat.
  • Serve with chips, soup or by itself!
