Simple Syrup:

  • 1 cup sugar
  • 1 cup water

  • 3 cups tequila
  • 2 cups lime juice fresh squeezed, about 12 to 20 limes
  • 1 recipe simple syrup
  • lime wedges for garnish
  • kosher salt for rim
  • 2 cups blueberry juice
  • fresh blueberries for garnish
  • mint leaves for garnish

  • In a small sauce pan combine the sugar and water. Heat on medium-low, stirring every so often until the sugar is dissolved. Cool completely and store in an airtight jar or container in the fridge. This is best if made in advance.*

  • In a tall pitcher, add the tequila, lime juice and (chilled) simple syrup. Stir to combine and set aside.
  • Rub the rim of each glass with a wedge of lime before dipping it into salt.
  • Fill with ice and fill the glass 3/4 of the way with the margarita mix. Then hold a spoon over the middle of the drink and slowly pour a little of the blueberry juice into the spoon that will then overflow slowly into the drink, creating the layered drink look.
  • Garnish with a few slices of fresh lime, a couple blueberries and fresh mint sprigs.

If short on time, make the syrup and then pour it into a smaller bowl and set it into a larger bowl that is filled with ice to speed up the chilling.
