Ingredients

  • pounds boneless skinless chicken breasts or thighs
  • 1 medium onion slices vertically
  • 12 whole black peppercorns
  • 2 bay leaves

Instructions

  • Place chicken in the bottom of a 2 to 3 quart pot. Add in the onion and spices and 6 cups water.
  • Cover and bring to a boil, once the water is at a rolling boil reduce heat to barely a simmer ( or low heat). Crack the lid an inch and cook for 10 to 12 minutes, then turn off the heat, leaving the chicken to finish cooking in the hot water for an additional 12 to 15 minutes.
  • Remove the chicken from the pot and either shred, slice or chop -- depending on what the recipe calls for.

Notes

You can poach chicken in only water or use other cooking liquids like broth, wine or coconut milk etc. Also, different whole spices, herbs and vegetables can be used too! Play around with it, you really can't mess this up.
