Ingredients

  • 1 tablespoon light olive oil
  • 1/2 cup finely diced yellow onion
  • 1 pinch kosher salt more or less to taste
  • 2 teaspoons dried oregano
  • teaspoon dried basil
  • 2 tablespoon tomato paste
  • 2 cloves minced fresh garlic
  • 1/4 cup dry white wine
  • 15 ounces canned crushed fire-roasted tomatoes
  • water
  • 1 pinch sugar

Instructions

  • Heat olive oil in a 10-inch skillet over medium-low heat. Add in diced onion, a pinch of kosher salt and sauté until soft and translucent. About 5 to 8 minutes.
  • Then add in the dried oregano, basil, tomato paste and minced garlic. Cook for 2 minutes to caramelize and cook the garlic before pouring in the white wine. Simmer for 2 to 4 minutes until reduced.
  • Add in the crushed tomatoes, a pinch of sugar and 1/2 a can (about 3/4 cup) water. Stir and simmer, uncovered for 12 to 15 minutes. Taste and season with 1/4 to 1/2 teaspoon kosher salt, or to taste.
