Pesto Fried Eggs are a breakfast game changer! Eggs are cooked in a simple homemade basil pesto, giving them a delicious garlicky and herbaceous flavor. Super simple and easy to prepare!

nonstick spray olive oil or avocado oil 2 tablespoons basil pesto store bought or homemade 2 eggs 1 pinch kosher salt black pepper freshly ground parmesan cheese freshly grated, for serving 1 pinch red pepper flakes for serving (optional)
Lightly spray a 10-inch skillet with nonstick spray and heat on medium to medium-low.
Add the pesto and wait for it to start bubbling.
Crack the eggs into the pesto and cook until just about set.
For sunny side up, cover with a lid and cook until the whites are set.
Use a spatula to transfer eggs to a plate. Top with a sprinkle of parmean, salt, pepper and chili flakes for some heat.
I served these pesto eggs with leftover crispy potato wedges and with a slice of buttered sourdough bread.
