Air Fryer Salt and Pepper Pumpkin Seeds are so ridiculously easy and delicious. Whether for a snack or to top your favorite salad, these pumpkins seeds are amazing and take a fraction of the time!

Slice of the stem to your pumpkin and cut in half from top to bottom.
Scrape out all the seeds and fibers into a bowl. Cover with water and soak for 10 mintues. Use your hands to remove any seeds from the fibers. The seeds will float to the top.
Use a slotted spoon to transfer the seed to a colander set into your sink. Rinse well, removing any excess pumpkin.
Pat dry with paper towel and transfer to a sheet pan lined with a clean kitchen towel. Paper towel will eventually stick to the seeds and leave some lint stuck to them.
Let dry completely. I usually do this over night.
Preheat your air fryer to 360°.
Spray the dried pumpkin seeds with olive oil spray and season with kosher salt and freshly ground black pepper.
Once preheated, arrange the seeds into the air freyer in a single layer (best as possible) and air fry for 10 minutes. Shaking the basket gently halfway through.
Larger batches may need more time. Season with more salt and pepper if needed.
Once toasted allow to cool slightly before snacking.
