Ingredients

  • pumpkin seeds
  • olive oil spray
  • kosher salt
  • freshly ground black pepper

Instructions

  • Slice of the stem to your pumpkin and cut in half from top to bottom.
  • Scrape out all the seeds and fibers into a bowl. Cover with water and soak for 10 mintues. Use your hands to remove any seeds from the fibers. The seeds will float to the top.
  • Use a slotted spoon to transfer the seed to a colander set into your sink. Rinse well, removing any excess pumpkin.
  • Pat dry with paper towel and transfer to a sheet pan lined with a clean kitchen towel. Paper towel will eventually stick to the seeds and leave some lint stuck to them.
  • Let dry completely. I usually do this over night.
  • Preheat your air fryer to 360°.
  • Spray the dried pumpkin seeds with olive oil spray and season with kosher salt and freshly ground black pepper.
  • Once preheated, arrange the seeds into the air freyer in a single layer (best as possible) and air fry for 10 minutes. Shaking the basket gently halfway through.
  • Larger batches may need more time. Season with more salt and pepper if needed.
  • Once toasted allow to cool slightly before snacking.
