Trim the ends off the zucchini. Cut the zucchini in half, so you have two 3-inch pieces. Slice each half into 3 (or more) 1/2-inch slices. Lastly, cut each slice into 1/2-inch sticks or “fries”. Set off to the side.
In a shallow bowl, add the italian breadcrumbs, parmesan cheese, garlic powder, onion powder, paprika, kosher salt and black pepper. Stir well to combine.
Crack the egg into a separate bowl, whisk to combine.
Work in batches, dipping the zucchini in the egg and letting any excess drip back into the bowl before adding them to the bowl with the parmesan breadcrumbs. Roll to coat and transfer to a wire rack and reeat with remaining zucchini. Lightly spray the zuccini fries with olive oil.
Preheat your air fryer to 400℉ (or 200℃) and spray the basket with olive oil.
Working in batches again, arrange the zucchini fries in an even layer and air fry for 5 to 6 minutes or until golden and crisp. Use tongs or tip out onto a platter and repeat with remaining zucchini fries.
Serve with marinara or basil ketchup.
To Make The Basil Ketchup:
In the bowl of your mini food process, add ketchup, basil, garlic and black pepper. Pulse until the garlic and basil is finely chopped.
