If you’re wondering what to make with leftover beef tenderloin, look no further. These Beef Blue Cheese Crostini Bites are simple and delicious. Toasted baguette slices are topped with leftover horseradish sauce, baby arugula, thin slices of beef tenderloin, blue cheese shards and chive.
Preheat your oven to 400℉ (or 200℃) and spray a large rimmed baking sheet with olive oil.
Slice baguette into 1/4 to 1/2-inch (or approximately) and place on the prepared pan. Spray the tops of the bread with olive oil before baking on the middle rack for 4 to 6 minutes.
Top each crostini with a dollop of horseradish cream sauce, a few baby arugula leaves, thin slice of beef tenderloin, blue cheese shards and chives.
