Ingredients

FOR THE HOMEMADE CATALINA DRESSING:

  • 1/2 yellow onion roughly chopped
  • 1/2 cup ketchup I like to use a sugar free ketchup
  • 1/4 cup red wine vinegar
  • 2 tablespoons honey
  • 3 tablespoons light brown sugar
  • 1/2 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 3/4 teaspoon kosher salt or more to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup avocado oil or extra light olive oil

Instructions

  • Throw the roughly chopped onion into the bowl of your food processor. Pulse until finely chopped.
  • Next add in the ketchup, vinegar, honey, light brown sugar, Worcestershire, paprika, salt and pepper.
  • Secure the lid and process until combined. With the processor running, slowly drizzle in the oil.
  • Once blended, pour the dressing into a jar with a tight fitting lid and store in the fridge until ready to use.
