Roasted Broccoli with Peanuts

Crispy broccoli tossed with nutritional yeast (for a cheesy nutty flavor), peanuts and green onions. A super easy and delicious side dish or main dish for one or two!

Ingredients

  • 1 large head broccoli preferably organic, cut into florets with 1/2 to 1 inch of stem intact
  • 2 tablespoons peanut oil
  • kosher salt to taste
  • 1 tablespoon rice vinegar
  • tablespoons nutritional yeast
  • 1/3 cup chopped lightly salted peanuts
  • 3 green onions sliced

Instructions

  • Preheat your oven to 500 degrees.
  • On a rimmed, metal baking sheet toss broccoli florets with peanut oil and then spread into an even layer. Roast the broccoli for 8-10 minutes, rotating the pan half way during roasting.
  • Once the broccoli tops are crispy and the underneath is caramelized, sprinkle with kosher salt and toss into a small pile. Drizzle with the vinegar and sprinkle with the nutritional yeast. Toss together until coated evenly.
  • Serve with chopped peanuts and sliced green onions.
